With the start of Fall today, nothing says a cozy dinner in quite like French Onion Soup. My go to on those crisp, chilly evenings, whether dining for one or hosting a huge gathering, it's the perfect compliment to a fall night.

I've been making this recipe FOREVER, it's a favorite in our home and I promise will be in yours as well!

French Onion Soup

To Make

On medium low heat, melt butter in large pot. Add thinly sliced onions to the pot and cook 10 minutes stirring occasionally. Liberally salt and pepper onions. Continue cooking another 10-15 minutes until onions are caramelized. Add beef, chicken stock and thyme. Reduce heat to low and cook another 20 minutes. Remove thyme sprigs. At this point either cool and store in fridge/freezer for later use or ladle into oven proof bowls. Top with slices of baguette and both cheeses. Broil in oven until cheese is melted. Serve, share, enjoy!
